Last summer, I accidentally stumbled upon this incredible bread at a local barn shop off the highway—and I’ve been hooked ever since. The owner bakes truly exceptional organic sourdough from scratch, even milling his own organic grains to preserve maximum nutrition. There’s no added yeast here—just real, traditional country sourdough made the way it’s meant to be. The process takes days, allowing the dough to slowly ferment and transform into something genuinely out of this world. The result? Deep flavor, perfect texture, and bread that’s as nourishing as it is delicious. And it doesn’t stop there—he also makes an amazing sourdough focaccia, cookies, and other baked goods, all crafted with the same sourdough starter and care. Honestly, I can’t eat store-bought bread anymore. This bread is that good—and my gut microbiome agrees! I stock up and freeze loaves just to always have it on hand. You can feel the passion in every bite. The owner, Gonzalo, clearly pours his heart into his craft, and it shows—people literally line up for his freshly baked bread. I’m beyond excited to have found this one-of-a-kind, true artisan bread here in Massachusetts. Simply unforgettable.

The baked goods here are amazing. We’ve tried several of the different breads and loved them all. We have a student from Germany living with us and this is the most authentic European and German type breads we have found for him, their bread is so much better there than what we can usually find here. Our last order had this German student raving how excellent it was. We’ve also tried the Belgian chocolate chip cookies and our entire family says they are the best cookies they’ve ever had. Highly recommend this bakery for high quality delicious baked breads and treats.

I'm convinced...Gonzalo makes some of the best bread in the state of Massachusetts. While searching for bread for a Christmas gathering, I came across Bethencourt Bakehouse - and I am exceedingly glad I did. The quality dominates most other options in the region, and the small-batch, grassroots mentality is something sorely lacking in society at large nowadays, both in the sense of adventure it provides but also the sense of community. Gonzalo is a wizard at the art of baking. The traditional sourdough has a beautiful crust, and a springy, chewy, slightly tangy crumb. Balanced and subtle enough to convert even those who claimed 'they didn't like sourdough' at the beginning of a meal. The cranberry sourdough takes the above and bends the formula with fresh, juicy cranberries in the mix. And the Anadama bread was a pullman loaf style that reminded me of a hybrid of a pumpernickel (without the rye taste) and Boston brown bread (without the tacky texture of the canned staple). You'd figure a man that good at baking bread may have shortcomings when it comes to cookies or muffins, but my sweet summer child, you'd be wrong. The cookies and muffins are also absolutely outstanding. As I said at the top, however, my favorite part about the entire experience was the unorthodox and unexpected of it all. It's a different process that you may be used to but this is a TRUE micro-bakery, with a true pioneer at it's helm. Gonzalo transitioned a long career in Corporate to purse an artistic vision, to share a dream with a community. He's passionate and affable, and his talents have found a place to grow massively. To support this isn't just a privilege, it's truly an honor. If you're looking for some of the finest breads and other baked goods in the area, and if you're looking to enjoy those while supporting a growing, local business; Bethencourt Bakehouse should top your considerations.

These breads are some of the best I've ever had! The owner is a very skilled baker and incredibly knowledgeable and friendly. The pop-ups at Eve & Murrays in Acton, MA are a great way to taste a sample and meet the owner. I've thoroughly enjoyed everything I've purchased and look forward to future offerings.
